In South Carolina, where I was born, I used to work in Planet Hollywood. On one of my breaks, I found Captain Crunch chicken fingers. It was one of the best appetisers that I have ever tried. I couldn’t stop eating it! Every day, I ordered the crispy, juicy chicken strips with creole honey mustard dip. Captain Crunch was a popular breakfast cereal that gave them a crispy coating. It made them deliciously crispy with a hint sweetness.
They were delicious when I returned to Ireland. But, there was one problem: we don’t have Captain Crunch. After several attempts with various crunched cereals and other additions, I finally got as close as I can.
This is the story behind one of our most loved dishes. Here’s the recipe. They are so delicious that I hope you enjoy them as much as we do.
They don’t have to be broken down in their entirety. Some Rice Krispies will not be broken up, while others can be ground to a fine powder. You can have both, or a mixture of both. This won’t take too long, but you will need to keep at it until you achieve consistency.
Season the Rice Krispies with salt and pepper. Mix the Rice Krispies with the grated Parmesan.
This is the first step. Now it’s time for Captain Crunch to begin coating.
Use your left hand to coat the chicken with the mayonnaise one at a time. Take it out. Transfer the chicken to your right hand. To give the chicken a nice crunch, press it down.
Tip: Left Hand-Mayo // Right Hand-Rice Krispie Mix Continue this until all of the pieces of chicken are coated. This will prevent the Rice Krispies from coating your hands.
Once the mixture is coated, transfer it to a casserole dish. After 10 minutes, turn the oven down to 180°C. Cooking time total 20 minutes. Once the chicken is done, remove it from the oven. Let the chicken cool down before you transfer it to a plate.
These Captain Crunch Chicken Fingers are still my favorite name. They are highly recommended by both me and my boys.
